Uses seasonal ingredients from Hokuriku
We directly purchase seasonal seafood from the Sea of Japan, including "Nodoguro" (rosy seabass), also known as the fatty tuna of white meat, "Snow crab", "Kabako crab", and "Winter yellowtail" in winter, "Firefly squid" and "White shrimp" in spring, "Natural rock oysters" in summer, and "Wakasa sea bream" in autumn. We also have banquet courses using carefully selected ingredients to liven up your banquet!

We are particular about the seasonings we use.
"Two-stage soy sauce" is made by adding soy sauce koji back into the finished raw soy sauce, instead of adding it to salt water.This soy sauce, made specially for sashimi, is made by repeating the soy sauce-making process twice, which greatly enhances its flavor and richness.It has the power to eliminate the fishy smell of fish, and goes particularly well with blue fish and red fish.
